Bye bye Baby - Sicilian Brut sparkling wine

From grapes carefully selected by harvesting in crates and subsequently checked in the cellar, our "Bye bye baby" has a pale straw yellow color, a fine perlage and good persistence, the nose expresses aromatic and fruit notes exotic with delicate floral notes, intriguing on the palate, excellent balance between acidity and freshness that enhances its persistence in the mouth.

AT THE TABLE : Interesting to be enjoyed as an aperitif glass. Pleasantly accompanies first and second courses based on fish, crudité, tempura and shellfish, also excellent to serve with dessert.

HARVEST: Manual harvest in boxes with careful selection of the grapes in the vineyard.

VINIFICATION: manual harvesting in crates with careful selection of the grapes, as soon as they arrive in the cellar they are de-stemmed. A short cold maceration is carried out and then softly pressed. After a period of aging of about 4 months on the yeasts at a controlled temperature, the base wine is placed in an autoclave and made sparkling using the long Charmat method.
