The Michele Oliva farm produces the Salina Dried Tomato: the result of an ancient tradition rooted in the Aeolian Islands, it is grown without irrigation in the areas of Valdichiesa and Pollara, volcanic lands rich in mineral salts. Between July and August, tomatoes with an intense aroma and a strong taste are harvested.

Michele Oliva, a passionate agronomist, moves to Salina chasing a dream: to recover the ancient seeds of the "Pumamuri" to produce high quality dried tomatoes.

The company mainly deals with naturally dried tomatoes. The tomatoes are cut by hand, spread on "Cannizzi", woven canes, salted and exposed to the sun for two days. Once dry they are ready to be transformed into numerous recipes.

Heroic agriculture that focuses on the originality of the product, on the search for the best berries for the production of seeds and keeping its characteristics intact.

The magic of the land of the island gives the Salina dried tomato a recognizable and unforgettable flavor.
