Pork cheek, made from the cheek of the pig (buccularu, in Sicilian), is salted and cured with aromas such as red pepper and wild fennel, then aged for 60 days. It can be tasted natural, thinly sliced or just heated and placed on slices of bread; however, its most famous use remains in dishes such as amatriciana and carbonara.
